Our easy air fryer Mediterranean vegetables are as healthy as they are delicious. This blend of zucchini, squash, and red bell peppers is made with a simple blend of spices and air-fried to limit oil and maximize fresh flavor.

Sliced zucchini, squash, and bell peppers on a white plate.

We love the light, fresh flavor of vegetables, whether they're added to larger meals, served alongside a lean protein like these air fryer boneless chicken bites, or served on their own as a snack or appetizer.

In our opinion, the best way to prepare vegetables is with an air fryer. It cooks vegetables like these keto air fryer mushrooms to tender perfection quickly and easily, and it limits the amount of oil you have to use to achieve a specific texture.

That's what we did with these air fryer Mediterranean vegetables. We took our air fryer Greek Meatballs and simply left out the meatball portion! What we ended up with is a simple vegetable recipe full of flavor, bright colors, and delicious flavors that's perfect as-is or paired with your favorite main course. Finish the light, flavorful theme with this delicious lemon loaf cake recipe for dessert!

Ingredients

A bell pepper, zuchini, and squash next to bowls of oil and seasonings.

Refer to the recipe card at the bottom of the post for a complete list of ingredients and their precise quantities.

Variations

  • Vegetables: You can use your favorite color of bell pepper in this recipe. You could also add other vegetables such as mushrooms, tomatoes, or red onions. Play around with them and see what you like best.
  • Oil: We used Mediterranean olive oil, but any quality olive oil will work. You could also use avocado oil.
  • Seasonings: Adjust the seasonings to your taste. For example, you could make a version using just Italian seasoning.
  • Spicy: Add a pinch of cayenne or red pepper flakes for a hint of heat.
  • Feta Cheese: Top your veggies with crumbled feta cheese for more Mediterranean flavor.

How to Make Air Fryer Mediterranean Vegetables

Seasoned, sliced zucchini, squash, and bell pepper in a metal bowl.

Step 1: Slice the vegetables and toss them with the olive oil and seasonings.

Two air fryer baskets full of sliced squash, zucchini, and bell peppers.

Step 2: Add the vegetables to the air fryer basket and cook at 400 degrees until they reach your desired tenderness.

Expert Tips

  • Slice the vegetables into 1-inch by 1 ¼-inch strips for even cooking and easy eating.
  • Toss the vegetables in the oil and seasonings rather than stirring them. This ensures they don't break.
  • Always preheat your air fryer for even cooking and accurate cooking times.
  • If you substitute olive oil with another type of oil, choose one that has a neutral flavor and a high smoke point.

Air Fryer Mediterranean Vegetables FAQ

Can I cook Mediterranean vegetables in an air fryer?

Yes, you can! Air-frying the vegetables locks in their natural sweetness and gives them a slight char for more flavor and visual interest.

Why were my air fryer Mediterranean vegetables not crispy?

The secret to vegetables that are tender on the inside and have a nice, subtle, crispy char on the outside is not overcrowding the basket. The vegetables must be in a single layer so they roast rather than steam.

Are air fryers good for a Mediterranean diet?

Air fryers are well-suited to a Mediterranean diet. They cook meats, such as chicken and fish, quickly and evenly. The same applies to most vegetables as well. This makes an air fryer ideal for the kind of healthy, flavorful recipes the Mediterranean diet is known for.

Super simple, just toss and air fry. I added a few red onions and some feta at the end, which worked out well. Easy side to throw together when you don’t want to overthink dinner.
