Variations

  • Seasonings: Try adding any of your favorite seasonings to these veggies to give them a unique flavor profile.
  • Try Other Vegetables: This recipe also works well with cauliflower, squash, and onions.
  • Spicy: Add sliced jalapenos for a Tex-Mex flavor and kick of heat.
  • Mushrooms: We used button mushrooms, but other small, meaty mushrooms like baby Portobellos will also work well.
  • Olive Oil: Any neutral oil with a high smoke point will work for this recipe.

How to Make Air Fryer Peppers and Mushrooms

A metal mixing bowl full of seasoned sliced peppers and mushrooms.

Step 1: Slice the peppers and mushrooms. Then, toss them with the oil and seasoning in a large mixing bowl.

Cooked bell peppers and mushrooms in an air fryer basket.

Step 2: Place the vegetables in the air fryer tray and cook at 400 degrees until tender, tossing the vegetables once.

Expert Tips

  • Cut the mushrooms in half and the bell peppers into ½-inch thick slices to ensure they both cook evenly and at the same rate.
  • Preheat your air fryer for even cooking and accurate cooking times.
  • Don't overcrowd the air fryer basket. Cook the veggies in two batches if you have a smaller air fryer.
  • Choose peppers with a bright color, no marring, and smooth skin without shriveling.
  • Fresh mushrooms should be a creamy color without blemishes, and they should never have a wet or slimy appearance.
