The inspiration for this classic cobb actually comes from a dear connection in my home state of Florida. For those that don't know, the salad originated in the 1930's and was created at the Brown Derby restaurant in Hollywood as a way to use up the day's leftovers. Now, the original restaurant is gone, but, it inspired Disney World to recreate the menu at Hollywood Studios. It was at that restaurant I found the inspiration for this strawberry chicken cobb salad. Every time I make it, I’m reminded of the classic atmosphere, the feeling of sitting somewhere special and having a simple salad becoming something unforgettable.
