These Starbuck pumpkin cream cheese muffins are a bit of a copycat combined with our own sensibilities. Moist and tender, they're loaded with the classic pumpkin and cream cheese flavor that everyone loves about the original, but they're delivered in a prettier package.

We love the pumpkin cream cheese muffins Starbucks rolls out every fall. All that sweet and tangy flavor is just so good! However, we're not fans of waiting for September to roll around so we can enjoy them. Since we can bake, we don't have to!

These Starbuck pumpkin cream cheese muffins are one part copycat and one part our own creation. They're just as delicious as the original, but they're frosted instead of stuffed with cream cheese filling, making them a bit sweeter and a lot prettier.

  • Diary-Free: If you have dairy issues, you can still enjoy these muffins. Simply use plant butter, cream cheese, and milk. High-quality substitutes taste almost exactly like traditional dairy.

Instructions

Muffins

  1. Combine all the dry ingredients in a medium bowl and set aside.
  2. Beat the sugar and wet ingredients in a mixer. Then, slowly mix in the dry ingredients with a rubber spatula until combined.Bowlful of pupmkin muffin batter.
  3. Use a 2-inch cookie scoop to place a heaping scoop of batter into a muffin pan with liners. Pumpkin muffin batter in lined muffin tin.
  4. Bake the muffins at 350 until a toothpick inserted into the center comes out clean.
  5. Let the muffins cool for a few minutes in the pan, then transfer them to a wire rack to cool completely.

Cinnamon Cream Cheese Frosting

  1. Beat the cream cheese and butter in a mixer until creamy. Then, add the remaining ingredients and mix until rich and creamy. If the frosting is too thick, add a splash of milk or cream to thin it out. Mixing bowl full of cinnamon cream cheese frosting.

Expert Tips

  • Be sure to buy pumpkin puree and not pumpkin pie filling. Puree is pure pumpkin, while pie filling has added sugar and spices. Be careful because they're often sold next to one another.
  • Bring your cold ingredients to room temperature. This makes it easier to mix them into the batter and avoids overmixing.
  • Speaking of overmixing, don't overdo it with the batter. STOP mixing as soon as the batter is combined. Overmixing creates excess gluten that will contract as the muffins bake and make them tough.
  • We recommend sifting your powdered sugar to ensure a super smooth and creamy frosting.
  • The muffins should be fully cooled before frosting them. Even slightly warm muffins will thin the frosting, and it will slide right off your muffins!
  • Always use full fat cream cheese for the frosting. Low fat cream cheese doesn't deliver the same texture.

A combination of moisture and fat is the secret to moist muffins. Fat from butter and/or oil helps make muffins moist and tender, while sufficient liquid hydrates the flour for a soft texture.

What is the most common mistake when making muffins?

Overmixing is the most common and most detrimental mistake when making muffins. Overmixing creates a ton of gluten, a protein found in wheat. This gluten contracts when the muffins bake, making them tough. Mix the muffin batter until combined and no further.

How do you know when muffin batter is properly mixed?

Muffin batter is properly mixed when there are no dry ingredients visible. The batter may be lumpy to some degree. It should NEVER be smooth. Smooth batter equals tough muffins.

Ingredients
  

Pumpkin Muffins

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoon pumpkin spice
  • 2 eggs room temperature
  • 5 ⅓ tablespoon coconut oil
  • 2 teaspoon orange olive oil
  • 1 tablespoon melted butter cooled
  • 2 tablespoon Singing Dog vanilla
  • 15 oz pumpkin puree
  • ¾ cup light brown sugar

Cinnamon Cream Cheese Frosting

  • 4 oz cream cheese softened
  • 4 tablespoon butter softened
  • 2 cups powdered sugar sifted
  • Sprinkle of salt
  • 1 teaspoon Singing Dog vanilla
  • 1 teaspoon Cinnamon
  • Splash of milk if necessary

Instructions
 

Pumpkin Muffins

  • Preheat the oven to 350 and line a 12-count muffin pan with muffin liners.
  • Mix the flour, baking soda, baking powder, salt, pumpkin spice, and cinnamon in a medium bowl.
  • In a stand mixer, mix the eggs, oil, vanilla, pumpkin puree, and brown sugar until well combined.
  • Slowly add the dry ingredients to the wet ingredients, mixing with a rubber spatula until fully combined but not smooth.
  • Use a 2-inch cookie scoop to place a heaping scoop of batter into each muffin well.
  • Bake the muffins for 22 to 26 minutes until a toothpick inserted into the center comes out clean.
  • Cool the muffins for about 5 minutes in the pan. Then, transfer them to a wire rack to cool completely.

Cinnamon Cream Cheese Frosting

  • Beat the butter and cream cheese for 2 minutes in a stand mixer.
  • Add the remaining ingredients and mix on high for 2 to 3 minutes until thick and creamy.
  • If the frosting is too thick, add a splash of milk to thin it out.
  • When the muffins have cooled completely, use a piping bag with a large open tip to frost them. Enjoy!

Notes

Storage
  • Refrigerate these muffins for up to 4 days in an airtight container. 
  • For longer storage, wrap chilled muffins in plastic wrap and freeze them for up to a month in an airtight, freezer-safe container. 
  • Defrost frozen muffins overnight. Bring the muffins to room temperature before serving. 
General Tips
  • Mix your muffin batter until combined, but no further. This means that there are no visible dry ingredients. It might be lumpy, and that's okay. 
  • To ensure the most tender muffins, let the batter rest for about 30 minutes so that any gluten can relax. 
  • If you can, measure your flour by weight for the most accuracy. 
  • If measuring by weight isn't an option, loosely spoon your flour into a measuring cup and level it off with a knife. NEVER scoop the flour out directly with the cup. The flour compacts, and you'll use too much. 
  • Be sparing if you need to add milk to thin out the frosting. Remember, you can always add more, but you can't remove it. 
  • Always use fresh baking soda and powder. If they're too old, they won't do the job, and your muffins will be flat.
A Note on Gluten-Free Flour
  • If you're trying a gluten-free version, use a high-quality 1:1 gluten-free flour. This means the flour already has everything it needs to be used just like regular flour in the same amounts. 
  • Not all gluten-free flours are created equal. We've had the most success with Bob's Red Mill 1:1 baking flour for our baked goods.
