They're made with yogurt and almond butter, so they're rich but healthy. Then, they're coated in melted chocolate for a touch of decadence - but not too much!

- Vanilla Extract: Vanilla extract adds a nice depth to the bars. We love Singing Dog vanilla for its quality, purity, and deep vanilla flavor.
Chocolate Coating
- Chocolate Chips: Melted chocolate chips are used to coat the bars, giving them a tasty chocolate and nut butter flavor combo.
- Coconut Oil: Coconut oil thins the chocolate for dipping and adds a nice hint of coconut flavor. We prefer Nutiva virgin unrefined coconut oil for its quality, purity, and rich coconut taste.

Instructions
- Combine all the yogurt bar ingredients in a mixing bowl until creamy.

- Using a 2-inch cookie scoop, place a large scoop of the mixture onto baking sheet lined with parchment paper.
- Gently press a popsicle stick into the middle. Swirl the filling over the popsicle stick with the back of a spoon. Repeat for all 6 bars.
- Place the bars in the freezer until they're fully hardened.
Chocolate Coating
- When the bars are frozen, combine the chocolate chips and coconut oil in a small microwaveable bowl. Heat at 20-second intervals, stirring between each, until the chocolate is melted and smooth.

- Dip each popsicle into the chocolate and freeze until the coating is set. Enjoy!

Expert Tips
- If you're using all-natural almond butter, be sure to stir it extremely well to incorporate the solids and the oils.
- If you choose to use dairy-free yogurt, choose the thickest brand possible. Some dairy-free yogurt can be very thin, which won't work for these bars.
- Be sure your glass bowl is microwaveable. Bowls not rated for microwave use can break, and they will become overly hot, making it dangerous to handle them.

Chocolate yogurt bars aren't exactly healthy. Rather, they're healthier than traditional popsicles. While they do have added sugar from the yogurt and almond butter, they contain far less sugar than mass-produced popsicles. They also have protein and healthy fat, which makes them a better option. The chocolate is also full of flavonoids, too!
If you use all-natural almond butter, it's important to really mix it until the oil and solids are fully combined. If not, you can get too much oil in the mixture and ruin your bars.
Adding oil to chocolate ensures a rich, creamy consistency without the need for tempering. In addition, it's the perfect way to thin the chocolate for dipping.

- 1 cup yogurt plus 1 tbsp
- ½ cup almond butter stirred well
- ¾ teaspoon Singing Dog vanilla
- Mini chocolate chips optional
Chocolate Coating
- 1 cups chocolate chips
- 2 tbsp coconut oil
Instructions
Yogurt Bars
- Line a baking sheet with parchment paper.
- Mix the yogurt, almond butter, and vanilla in a bowl until creamy.
- Using a 2-inch cookie, place a large scoop of filling onto the parchment paper-lined baking sheet.
- Press a popsicle stick into the filling and use the back of a spoon to swirl it over the popsicle stick.
- Repeat for the remaining 5 bars.
- Freeze the bars for 3 hours until solid.
Chocolate Coating
- When the bars are frozen, melt the chocolate chip and coconut oil in a microwaveable glass bowl at 20-second intervals, stirring between each until the chocolate is melted and smooth.
- Dip the bars in the melted chocolate, place them back on the baking sheet, and freeze again for 10 minutes until set.
Notes
- Store these chocolate yogurt bars in the freezer for up to a month in an airtight, freezer-safe container.
- All-natural nut butters separate as they sit. Be sure to thoroughly mix your nut butter of choice so that all the solids and fat are incorporated well.
- You can make things easier on yourself by using processed nut butter with added stabilizers. Just be aware that they have additives in them.
- Any brand of yogurt will work for these bars, but it has to be thick. Thin yogurt won't give you the right consistency.
- These bars are better for you, but they are by no means healthy. These should be enjoyed in moderation BUT without any guilt. They're good, y'all.
