These chocolate yogurt bars are made with yogurt and almond butter and then coated in chocolate, making them a better-for-you alternative to traditional popsicles.
Mix the yogurt, almond butter, and vanilla in a bowl until creamy.
Using a 2-inch cookie, place a large scoop of filling onto the parchment paper-lined baking sheet.
Press a popsicle stick into the filling and use the back of a spoon to swirl it over the popsicle stick.
Repeat for the remaining 5 bars.
Freeze the bars for 3 hours until solid.
Chocolate Coating
When the bars are frozen, melt the chocolate chip and coconut oil in a microwaveable glass bowl at 20-second intervals, stirring between each until the chocolate is melted and smooth.
Dip the bars in the melted chocolate, place them back on the baking sheet, and freeze again for 10 minutes until set.

Store these chocolate yogurt bars in the freezer for up to a month in an airtight, freezer-safe container.
General Notes
All-natural nut butters separate as they sit. Be sure to thoroughly mix your nut butter of choice so that all the solids and fat are incorporated well.
You can make things easier on yourself by using processed nut butter with added stabilizers. Just be aware that they have additives in them.
Any brand of yogurt will work for these bars, but it has to be thick. Thin yogurt won't give you the right consistency.
